It’s Meal Prep Monday! I love making a few things to hold me over through the week and ensure my meals are somewhat planned or at least I have easy to grab options. With eating 5-6 times a day, you need options!! :)
I have been liking a lot of Jamie Eason’s LiveFit recipes lately and today I made her Chocolate Protein Bars and the Turkey Meatloaf Muffins. I’m not going to share the recipe for the protein bars because they weren’t my fave but you can check them out for yourself here.
The Turkey Meatloaf Muffins on the other hand are AMAZING! I tweaked the recipe a little as far as amounts and the ingredients, so I’ll share mine here. I highly recommend these for a quick snack or as part of a meal!

You will never want to make rice crispy treats again! These are so delicious! The original recipe for this is from Jamie Eason. I tweeked it a little bit. Find the original recipe by clicking here. If you make 18 servings they’ll be ~157 calories each with 4 g. protein; I did 12 servings to make it a small meal and they’re ~236 calories with 8 g. protein. Enjoy!

We are nearing the end of the first month of 2013 and I am blown away with how many of you are have committed to making this year your healthiest one yet!
I made a decision to start the new year off by conquering one of my fears - Insanity. Many of you have tried this program or even completed it. Kudos to you! For some reason, I had a fear of Insanity. Maybe Shaun T’s muscles were a little too intimidating for me, but I knew that when my friend asked me to do the program with her in January, I couldn’t say no. I’m a Beachbody coach afterall! So I took the on the challenge and started the 60-day program on January 7. I am now starting week 4 of the program and am loving it! I can do things now that I couldn’t do a few weeks ago and I feel stronger and leaner!

I said in a previous post that I have been putting my annual goals together for the last three years. This years’ goals excite me because I am coming out of a year that was bleak in many areas for me.
I felt frustrated that I wasn’t using my degree. I was ashamed that I wasn’t bringing in an income for our family to live off of. I felt guilty because my husband was working so hard every day and carrying the load of providing for our family. I wanted to buy a house and start a family and thrive in my business but none of these things were happening because of our financial situation.
But I am grateful for God’s grace in my life. I’m grateful He opened my eyes to the possibilities that are ahead. I’m grateful to be able to start every morning with my Savior and having Him open my heart to discover the dreams I have within me. I’m grateful to have so many people surround me that are rooting for me, that believe in me, that are proof that hard work and dedication can result in your dreams coming true.

It is true that a goal is a dream with a deadline. You can dream all day long but your life will start taking off when you start working towards those dreams and reaching your goals. So 2013 is my year to reach for my dreams and accomplish the goals I currently have in sight. Here are the things I will be working on this year.
